THE ROLEOffer expertise in management, operational and hospitality services as part of the team that oversees military messes throughout Canada and the world. The military mess is the centre of social life for serving members of the Canadian Armed Forces, where customs, responsibilities and social standards are practiced. Messes are steeped in rich military heritage and tradition. The mess includes food as a central component of events and camaraderie. Personnel Support Program (PSP) Hospitality Services and management are pinnacle to their success.
The Chef plans, organizes, and supervises the kitchen operations in the mess. The Chef enforces the health, hygiene, safety, and security standards and programs and ensures quality products and service are being provided while maintaining portion sizes and presentation standards. The chef determines and arranges member’s food requirements for functions, orders food and kitchen supplies.
QUALIFICATIONS NEEDED
Education, Certifications and Licenses
College diploma or certificate in hospitality, food service management, or a related field AND some years experience in hospitality, food and beverage service sector
OR
High school diploma AND some years experience in the food service sector, or in a related hospitality field, including supervisory experience
AND
A current Inter-provincial Chef’s certificate
Food Handling Certification, as required
Experience
In planning and supervising food preparation and delivery
In menu planning
In inventory and cost management
In preparing work schedules
In applying policies, procedures, and relevant legislation
Competencies
Client focus, organizational knowledge, communication, innovation, teamwork and leadership.
