Description

Reporting to the supervisor of his department, the production day laborer must proceed to the stages of preparation of ducks according to established quality and performance standards. All employees, no matter which department or task they are assigned to, must meet the standards and standards:

• animal welfare;
• hygiene and sanitation and food safety;
• health and safety at work;
• product quality;

The following tasks are to be carried out according to the department where it is assigned:

Slaughter
• Unload the trucks and supply the slaughter line (forklift driver only) with respect for animal welfare;
• In keeping with animal welfare, install ducks on the line, bleed and monitor plucking activities;
• Inspect products, ensure quality and respect for the various standards in force (quality, safety, health and safety);
• Promptly report any quality, safety or health and safety issues;

Evisceration
• Prepare ducks and monitor the operations of production equipment;
• Remove the non-edible parts of the ducks;
• recover and process value-added products;
• Inspect products, ensure quality and respect for the various standards in force (quality, safety, health and safety);
• Promptly report any quality, safety or health and safety issues;

Packaging
• Complete the necessary steps to cool the ducks;
• Make the required cuts based on customer orders;
• Pack whole ducks or duck pieces and operate various equipment for packing or vacuuming products;
• Properly identify products;
• Inspect products, ensure quality and respect for the various standards in force (quality, safety, health and safety);
• Promptly report any quality, safety or health and safety issues;

Weighing / Shipping
• Proceed to the final stages of product preparation (cooling, freezing);
• Inspect, weigh, package and label products in accordance with customer orders and established quality standards;
• Palletize and store products in the right place;
• Keep inventory of products;
• Prepare orders and load trucks.
• Promptly report any quality, safety or health and safety issues;

Washing and sanitation
• Assemble and dismantle all equipment to ensure the hygiene of each one;
• Clean and sanitize production departments to meet HACCP / SQF_2000-HACCP standards;
• Inspect equipment, ensure the quality of operations and respect for the various standards in force (quality, safety, health and safety);
• Promptly report any quality, safety or health and safety issues;

Feather treatment
• Drying and packing the feathers collected in the plucking process;
• Put in a bundle and store the feathers;
• Prepare orders and shipping orders;
• Load shipping containers and complete the required documentation for shipping.
